Crunchy Peanut Butter Granola

This big batch of granola was made and finished within 8 hours- and it took me that long because I spent the day in the library, so really, it was demolished within 1 hour. It is so incredibly delicious, and if I had been more disciplined it would have made for the most amazing breakfast for the whole week. I had been struggling for a while to make crunchy and clustered granola without adding too much maple syrup, and the peanut butter really does the job, along with giving it the most amazing flavour. It’s really easy and quick to make, and only requires 5 ingredients and about 30 minutes. You can then add in as many things as you want, but I like to keep mine simple and just add some chopped dates or dried cranberries, but feel free to add some dark chocolate chunks if it’s one of those days. This recipe really is fool-proof and fuss-proof, so get your bake on this weekend and enjoy it!

3 cups oats
4 tbsp coconut oil
4 tbsp peanut butter
4 tbsp maple syrup/honey
1 tsp cinnamon
Dried cranberries
Chopped dates
Pumpkin seeds

Pre-heat oven to 170Λ™C and pour the oats into a bowl. Over medium heat, combine the coconut oil, peanut butter and maple syrup and stir until coconut oil is melted and everything is fully combined. Let cool for a few minutes, and then pour that deliciousness (mixture) onto the oats. Mix until the oats are evenly covered, and then add everything to a lined baking tray. Bake in over for 20-25 minutes, stirring every 10 minutes or so to make sure it all gets evenly golden. Once removed from oven, mix in whichever add-ins you want. At this point you can either tuck in right away while it’s warm, or store in an airtight container for however long your will-power works for. Enjoy!
